April Produce: Roasted Balsamic Radishes Recipe

Instructions:

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. If needed, trim the tops of the radishes and wash them thoroughly. Cut all the radishes in half lengthwise.
  3. In a bowl, toss the radishes with our olive oil, our balsamic vinegar, salt, and pepper until evenly coated.
  4. Arrange the radishes in a single layer, cut side down, in a large cast iron skillet or on a rimmed baking sheet.
  5. Roast in the preheated oven for 15 minutes, then flip the radishes over. Continue roasting for another 10-20 minutes, or until they are fork-tender and golden brown.
  6. Check for seasoning and adjust if necessary.
  7. Garnish with minced fresh parsley before serving, if desired. Enjoy hot!
